This is a wonderful marinade for tofu or tempeh kabobs as well.
Diet Types: Vegan, Vegetarian
Ingredients:
  • 1 16-ounce-jar Seitan (wheatmeat)
  • 15 whole button mushrooms
  • 1 green bell pepper, cut into chunks
  • 1 sweet onion, quartered, separated
  • 2 zucchini, cut into 1/2
  • 2 yellow summer squash, cut into 1/2" chunks
  • 3/4 cup lime juice
  • 2 tablespoons Barley Malt
  • 3-4 cloves garlic, minced
  • 1 tablespoon minced onion
  • 2 tablespoons finely chopped Cilantro (chinese parsley)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup extra virgin olive oil
  • Serves: 4
    Cooking Time: Over one hour
    Instructions:
    Mix marinade and pour over seitan and vegetables. Marinade at least 2 hours, preferably longer. Skewer ingredients and broil or grill until veggies are done to your likeness.
