Ingredients:
  • 1 salmon steak
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon Tamari
  • 1 tablespoon Balsamic Vinegar
  • 1 organic potato, washed, cut into 1/2
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup red onion, minced
  • 1/4 teaspoon salt
  • 1 stalk celery, sliced thinly on the diagonal
  • 1/4 cup chopped parsley
  • 1/4 cup extra virgin olive
  • 1/4 cup Balsamic Vinegar
  • 1 clove garlic, minced
  • 2 tablespoon fresh basil, chopped
  • Serves: 4
    Cooking Time: 30 minutes - one hour
    Instructions:
    Marinate the salmon in the olive oil, Tamari and vinegar for 30 minutes. Grill or broil, turning once, for about 10 minutes (8 minutes per inch) or until opaque throughout and the fish flakes easily with a fork. Boil potatoes until tender. Drain and toss with 1 tablespoon olive oil, salt and onion. Cool. Flake salmon into a bowl along with the celery and parsley. For dressing: mix remaining ingredients together in a bowl and pour over the salmon. Toss to mix well. To serve: Line plates with lettuce leaves. Pile potatoes on top and then the salmon on top of the potatoes. Garnish with any other vegetables of choice.
